- 300g fresh spinach
- 1 onion
- 150g sweet corn
- 200g (2 cans drained) of fish fillet (herring, sardines, mackerel, wild salmon)
- 100g telemea or feta
- 20ml olive oil
- vinegar to taste
- salt to taste
- 250g tomatoes (on the side)
- 250g cucumbers (on the side)
I think this is my fastest main course recipe. I eat it twice a week to get my weekly omega-3 needs without taking supplements. Omega-3 supplements are quite expensive and most of them are rancid. If I can get my omega-3 from fish directly, that is amazing. This salad is not only packed with omega-3, but also lots of fiber, which has been linked to preventing all-cause mortality.
I know salads give the impression of no taste and starvation, but this one is very filling and far from being tasteless. I warn you not to eat it before a date or meeting, because it is hard to lose the onion and fish odor.
Instructions
- 1.Wash and drain the spinach. You can cut it into smaller pieces if you like.
- 2.Put it in a big pot.
- 3.Chop the onion and put it over the spinach
- 4.Put the corn in the pot
- 5.Cut the telemea into small pieces and put it in the pot
- 6.Drain the liquid from the fish can and put the fish in the pot
- 7.Add the oil, vinegar, and salt and mix everything
- 8.Serve with the tomatoes and cucumbers on the side or put them in the pot as well
- 9.Enjoy!
