- 5 eggs
- 150g 4% fat cottage cheese
- 100g red pepper (~1/2 pepper)
- 100g onion (~1/2 onion)
- 100g tomatoes (~1/2 tomato)
- 50g fresh spinach
- 50g mozzarella cheese
- 1 tortilla wrap
I like to make this recipe for my wife for breakfast because it is easy to prepare. I use the air fryer on the cake program, but you can use the oven as well. The taste is similar to pizza, and you can also serve it on the go when traveling. It is very nutritious and filling.
Instructions
- 1.Line the air fryer basket or a circular pan (if using the oven) with parchment paper.
- 2.Place the tortilla wrap over the parchment paper.
- 3.Beat the eggs in a large bowl.
- 4.Add the cottage cheese and whisk until evenly mixed.
- 5.Add the onion, pepper, spinach, and tomatoes, and whisk gently until evenly mixed.
- 6.Pour the mixture into the air fryer basket or pan and ensure it is evenly spread.
- 7.Cook for 17 minutes at 180 C (make sure the oven is preheated).
- 8.Enjoy!
