Beans and Ribs Soup
A healthier version of the traditional Romanian beans and ribs soup.

Ingredients
- 600g carrots
- 400g parsnip root
- 300g onion
- 300g red pepper
- 1.8kg smoked pork ribs
- 4L water
- 750g beans
- 2L tomato paste
- 2 bunches of fresh parsley
- 2 bunches of fresh dill
- 1 bunch of fresh lovage
- 2 tablespoons of vegeta
- 1/2 teaspoon of black pepper
- 1 tablespoon of paprika
You might think it's a joke or a lie that I'm featuring the traditional beans and ribs soup in a healthy recipes blog. The secret is that most of the fat from the pork ribs melts and floats in the water, and I remove it. From these 3 pork rib strips, I removed approximately 200ml of fat, which is almost 2000kcal in total. This fat removal trick works for most soups or stews with fatty meat. Keep the taste, remove the excess calories.
Besides this, I added lots of vegetables, and this recipe is high in fiber. Fiber has been shown to increase lifespan and decrease the risk of all-cause mortality. In other words, healthy typically means high-fiber, low-fat (low-calorie), and made with real food.
Because I don't have a big enough pressure cooker, I cooked in multiple batches: first the beans, second the ribs, and lastly the vegetables. To save time, cook the beans and ribs together. If you don't have a pressure cooker, you will need to double the cooking duration with the lid on.
Instructions
- 1.Soak the beans for 24h
- 2.Cut the ribs into smaller pieces
- 3.Put the ribs together with the beans, add the water, and cook in the pressure cooker for 30 minutes (high pressure)
- 4.After the ribs and beans have finished cooking, remove the fat with a ladle
- 5.Using the food processor, chop the carrots, parsnip, onions, and peppers into small pieces
- 6.Chop the fresh parsley, dill, and lovage
- 7.Put the chopped vegetables, spices, seasoning, and the tomato paste in the pressure cooker and cook for 10 minutes on the vegetables stew program
- 8.Mix the cooked vegetables together with the cooked beans and ribs
