Ingredients

  • 1 kg sausage
  • 300 g onion
  • 1.5 kg peas
  • 1 kg carrots
  • 750 g tomato paste
  • 1 bunch fresh dill
  • 5 g thyme
  • 4 bay leaves
  • 2 g black pepper
  • salt to taste

Peas with sausage is the kind of home stew you make when you want something filling, packed with vegetables, without spending hours in the kitchen. The healthier trick is the same as for fatty meat soups: after the sausage cooks, skim off the fat that rises to the top. You keep the smoky flavor and cut the calories.

I used a pressure cooker (stew program / fish menu) and a food processor for the carrots and onions so they chop fine and even. The peas and dill bring fiber and aroma, and the tomato paste ties the sauce together. Salt only to taste — the sausage is already salty.

Instructions

  1. 1.Cut the sausage into small pieces and cook in the pressure cooker for 15 minutes on high pressure. Remove the fat that rises to the top.
  2. 2.Peel the carrots and onions, put them in the food processor, chop finely, and add them to the pot.
  3. 3.Chop the dill and add it to the pot.
  4. 4.Add the spices, herbs, and tomato paste to the pot.
  5. 5.Cook for 20 minutes on the soup/stew program, fish menu.
