  • 150g cheese (cascaval or similar semi-hard cheese)
  • 75g olives
  • 150g red bell pepper
  • 1 packet baking powder
  • salt and pepper, to taste

This savory appetizer cake is what I make when I want something filling, easy to share, and good warm or at room temperature. Whisk eggs with flour and Greek yogurt, fold in ham, pepper, olives, and cheese, then bake as muffins in the air fryer or as a loaf in the oven.

I prefer the muffin version: it portions itself, works for brunch or a picnic, and stays soft thanks to the yogurt. If you want a classic loaf, pour everything into a pan and bake longer.

Instructions

  1. 1.Beat the eggs and mix with the flour and Greek yogurt. A blender or food processor makes this even quicker.
  2. 2.Chop the pepper, olives, and ham into small pieces (by hand or in a processor) and fold them into the batter.
  3. 3.Grate the cheese and stir it in.
  4. 4.Add salt, pepper, and the baking powder; mix until evenly combined.
  5. 5.For muffins in the air fryer, bake at 160 °C for 25 minutes. In the oven, bake the muffins at 180 °C for 30 minutes, without fan.
  6. 6.For a loaf pan (no muffins), bake 45 minutes at 180 °C without fan, then 15 minutes more with fan.
  7. 7.Let cool slightly and enjoy!
