Ingredients

  • 600g carrots
  • 400g parsnip root
  • 300g onion
  • 300g red pepper
  • 1.8kg smoked pork ribs
  • 4L water
  • 2kg potatoes
  • 500g cauliflower
  • 2 bunches of fresh parsley
  • 2 bunches of fresh dill
  • 1 bunch of fresh lovage
  • 1 tablespoon of vegeta
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of paprika
  • (optional during serving) 1kg low-fat kefir or Greek yogurt

This is the next traditional Romanian cuisine recipe based on ribs and I am not finished yet. I still have the ribs and salad recipe coming soon.

As I said in the beans and ribs recipe, the secret is that most of the fat from the pork ribs melts and floats in the water, and I remove it. The only reason most Romanian recipes are unhealthy is because they have too much fat which comes with too many calories. Remove most of the fat (not all) and we are good to go.

Because I don't have a big enough pressure cooker, I cooked in multiple batches: first the ribs and lastly the vegetables. If you don't have a pressure cooker, you will need to double the cooking duration with the lid on. The cauliflower can be cooked at the end after you mix the ribs with the vegetables for 5 minutes because it cooks the fastest and we don't want it to be too cooked.

Instructions

  1. 1.Cut the ribs into smaller pieces
  2. 2.Put the ribs together in the pressure cooker, add the water, and cook for 30 minutes (high pressure)
  3. 3.After the ribs have finished cooking, remove the fat with a ladle
  4. 4.Using the food processor, chop the carrots, parsnip, onions, and peppers into small pieces
  5. 5.Cut the potatoes into small cubes
  6. 6.Chop the fresh parsley, dill, and lovage
  7. 7.Put the chopped vegetables, spices, and seasoning in the pressure cooker and cook for 10 minutes on the vegetables stew program
  8. 8.Mix the cooked vegetables together with the cooked ribs and the cauliflower and boil for 5 more minutes
  9. 9.Serve with Greek yogurt or kefir
  10. 10.Enjoy!
